Named after Rosedale Road in Lawrenceville, NJ, this Appenzeller Style cheese has a beautiful straw-colored paste flecked with tiny holes—a characteristic of cheese styles rooted in Switzerland. The rind is washed in a clever blend of apple cider from Terhune Orchards, organic thyme, and sassafras root, which imparts a beautiful rose-gold color to the rind, and a mild fruity flavor to the cheese. NOTE: This first batch of our Rosedale is only aged 3 months. Check back in 3 more months for some updated tasting notes!

Rosedale is the perfect cheese for gratins and fondues. It is also amazing in French onion soup and pairs well with fruits and lighter beers. Check out our blog post for a mouthwatering Rosti recipe featuring Rosedale.
