Toma

 Our most popular cheese and also a 2012 Good Foods Award Finalist, Toma is a traditional washed rind tomme made with raw milk and aged in our caves for a minimum of 3 months. Our cheesemakers produce these odorous 8-10 lb. wheels throughout our milking season. As our cows’ diet changes over the course of the year, subtle flavor variations take place in this cheese. Toma’s tangy, mushroomy flavor, creamy texture and superior meltability is hard to resist.
