Our most popular cheese and a 2012 Good Food Awards Finalist, Toma is a traditional washed-rind Tomme style cheese. It is made with raw milk and aged in our caves for a minimum of 3 months. Our cheesemakers produce these odorous 8- to 10-pound wheels throughout our milking season. As our cows’ diets change over the course of the year, subtle flavor variations take place in this cheese. Toma’s tangy, mushroomy flavor, incredibly creamy texture, and superior meltability is hard to resist.
