Peppers, Eggs & Onions Sandwiches

Serves 2
Per Serving: 511 cal, 14g fat, 920mg sodium
71g carb, 4g fiber, 24g protein


  • 1 teaspoon butter or oil
  • 1 green bell pepper, chopped
  • 1 sweet onion, chopped
  • Cherry Grove Farm fresh eggs, lightly beaten
  • salt & fresh cracked pepper
  • 1/2 baguette, or 2 rolls, split


  1. Saute veggies in the butter or oil just until the onions are soft
  2. Add the eggs and scramble together, cook to desired firmness
  3. Season to taste and fill the baguette or rolls

Wrap in aluminum foil and pack into a 50 year old metal cooler, you’re ready for a picnic!
