Get your hands messy in this hands-on focaccia workshop! Learn about the unique mixing, proving, and finishing techniques required to make this simple, versatile Italian bread. We will also discuss and demonstrate ways to incorporate fun ingredients and toppings, and how to fit bread baking into your busy schedule.

You will leave with your own focaccia dough to shape and bake at home, as well as a step-by-step recipe to follow for future bakes. The dough we will make in class is leavened using a natural sourdough starter, but you will also learn how to make focaccia using commercial powdered yeast from the grocery store. *To learn more about maintaining and using a sourdough starter, check out our sourdough class!

All equipment and ingredients will be provided. We will use King Arthur Flour, readily available in area stores. Cherry Grove Farm Store also carries Morganics wheat, einkorn and rye flour, grown and milled locally in Hillsborough, NJ.

This workshop is open to total beginners as well as people who would like to refresh and further expand their knowledge about bread baking. 

Class runs approximately 2.5-3 hours, including time to sample the finished focaccia alongside CGF cheeses.

Your teachers will be either Piroska Toth or Sam Siegel. Piroska Toth is a native of Hungary and has been an enthusiastic home baker for 35 years and a sourdough bread baker for over 14 years. She is eager to share her sourdough starter and her experience with you all! Sam Siegel was a cheesemaking apprentice at Cherry Grove Farm, has a degree in Baking and Pastry Arts from the Culinary Institute of America, and has built upon his experience at Sourland Bread to establish himself as an artisan bread baker in Central & Southern NJ.

In this workshop you will have a hands-on opportunity to get elbow deep in dough — from dry flour to baked loaf. It will be fun and educational all at once! It is geared towards beginner bread bakers, but can also help those who have had some experience.
